WHAT I ATE WEDNESDAY!

Hi everyone! 

I know it has been quite some time since I last posted but I am trying really hard to work out things so I can post much more often and make this blog what I have always hoped it would be. 

I am hoping to begin a couple series and today I want to introduce "What I Ate Wednesday". A Youtuber that I love to watch (Said Youtuber, Anna Saccone) uploads a video each Wednesday explaining what she ate that day, or probably a day or two before, which is what I will be doing, but none the less each Wednesday is there is a post explaining what she ate in a day and I have grown to really enjoy them and get ideas for myself so I figured I could give it a shot! 

I am trying to make healthier choices in my everyday diet without depriving myself of things I love to eat. I find it much harder to stick to eating better when I go crazy and only eat "healthy" all day long everyday. It's all about moderation! I hope this post and the ones to follow will give you some new inspiration and ideas for your every day diet. 

Breakfast: Oatmeal and Fruit


One packet of instant oatmeal and a few sliced strawberries. I am trying to cut out some empty carbs, I love having eggs and toast in the morning but starting the day with bread just didn't feel like the best choice. I use maple and brown sugar flavored oatmeal so it is not bland and I really enjoyed it paired with the strawberries! 

Lunch: Chicken Salad 


Like I said, it's all about moderation. I made myself a salad for lunch and although it wasn't the lowest in calories I feel it was a better choice than processed pizza bites or pasta. I like good ol' lettuce that has nothing to it - Iceberg. So I start with a nice bed of crunchy lettuce, some sliced cherry tomatoes, a boiled egg white, no yolk, a tiny bit of cheese (literally about 1 tablespoon), a few croutons for crunch, and a chicken strip. This is where I need explain a little. I know the chicken strip isn't the best, I really do, but like I said before I could have made a much worse choice! I baked the chicken strip and cut it into tiny pieces so it was evenly through the salad. I put about a tablespoon or so of ranch dressing on it, which I also know isn't the best, and went with it. It turned out well and I packed one for school the next day as well! 

Snack: Greek Yogurt and Fruit 


I have recently found that I love bananas in my yogurt, especially vanilla Greek yogurt. It doesn't even taste like a banana anymore and it's a lovely mid afternoon pick me up! 

Dinner: Summer Pasta. This is my boyfriends favorite meal of all time. I can't say much about the recipe because I'm holding it as a family secret but I will tell what I can. It is diced tomatoes, fresh or the canned kind that have been drained, marinated over night in white wine with some Italian inspired seasonings, asparagus, angel hair pasta, and finished with some sweet basil and parmesan cheese. It is absolutely amazing and fresh. 


Another Snack: Pirate Booty Popped Corn 

I've been wanting to try this stuff for so long and I finally grabbed a bag on my weekly grocery shop. It's so yummy and has no artificial colors, is gluten free, and no additives! YUM!
